Eggs in cold water first, just covering, don't time until boiling has begun, and don't boil past medium temp; drain and place into ice bath immediately. If the bubbles are too harsh, they can destroy the eggs. Wait for them to cool. To peel more conveniently, make a crack somewhere, then get beneath that soft, filmy membrane between the shell and the egg with your thumb, and essentially, rub it off.
